I absolutely LOVE baked muesli! I have it most days for breakfast or a snack and I’ve tried all sorts from loads of brands over the years.
There are some good ones out there on the shelves but I find a lot are full of “fillers” like rice puffs or oats and only a very small amount of the best bits.
So, I thought I would make my own with ONLY the best bits J
This recipe is replicated almost weekly in our house and to keep things simple I use a ratio of 1cup per ingredient. If you want to change it up though, feel free.
This is my easy, delicious, versatile and nutritional Baked Muesli recipe:
Ingredients:
1 cup raw walnuts
1 cup raw almonds
1 cup broken pecans
1 cup shredded coconut
1 cup pumpkin seeds
1 cup flaxseed or flaxseed meal
1 cup chia seeds
1 cup hemp seeds
1 cup raw honey
These are all of my favourite nuts and seeds but you can of course substitute your own into this recipe as you choose or as your pantry allows.
Method:
Pre-heat oven to 140 C
Prepare large baking tray with baking paper
Mix all ingredients except the honey in a large bowl until mixed evenly
Pour the honey through the muesli mix and using a metal spoon mix the honey throughout
Pour muesli mix onto the prepared baking tray and spread evenly
Bake in oven for 15 minutes – you will be able to smell the delicious roasted nuts and honey!
Check your muesli is done to your liking, I like everything to be lightly baked but if you prefer a deeper bake then add another 5 minutes.
Leave the muesli to cool and the honey will harden into little clusters around the muesli mix making it perfect for bite-size snacks. Enjoy
